I've noticed a lot of fingerling potato volunteers also even in areas of the garden where I haven't planted potatoes for two years. I guess the easiest way to develop a crop from them would be to just let them grow right where they spring up. You could also experiment with seeing how well the potato sprouts would transplant in order to consolidate them into a new growing bed. Good luck and keep us posted with the results that you get.

I have a ton of volunteer purple fingerlings that keep on coming for the last 3 years. How can I develop these volunteers into and actual crop? Any recommendations??? Just trying to feed that family.
